Getting back at it….

So, I haven’t posted here in months…sorry about that. I do plan on keeping up with this, especially the recipes section. I’ve been working hard on a new routine and working towards training for my first half marathon. I’ve been developing a new nutrition plan for myself, as well as a new routine which mixes hypertrophy training with half marathon training. I also moved.

Needless to say, I have been EXHAUSTED. Now that I’m back in the swing of things, I’ll be posting here more often! Having just turned 28 this month, I look forward to what MY new year has in store for me.

Don’t kill me…but since I’ve moved, I’ve had a lot less time to prepare breakfast in the morning before work. I’ve had to switch my normal breakfast of eggs and chicken sausage to a whey supplement shake and a piece of my Coconut Flour Banana Bread. No complaints though! This shake is delicious! This shake is also amazing post-workout, or just anytime you need to get a little extra protein in and want something sweet!

Here is the recipe…

Chocolate PB&J Protein Shake

  • Servings: 1
  • Difficulty: easy
  • Print

Ingredients

  • 5 oz of Unsweetened Vanilla Almond Milk
  • 1/4 cup frozen berries of your choice (I like the blackberry, blueberry, raspberry mix I get at Costco!)
  • 1 tbsp Chocolate PB2
  • 1 serving (or more depending on your protein needs) of protein powder of your choice. (I am currently using Vitacost’s Whey Protein Complex in Chocolate. It’s more natural than other brands and doesn’t use artificial sweeteners or colors! The taste is awesome, too!)
  • 1 tsp arrowroot powder

Directions

Place all ingredients in personal sized mini blender and blend until desire thickness. I like mine really thick and creamy. It takes about 2 minutes to get it to that thickness!

Primal Cinnamon Apple Chips

Okay, first off, let me rant about how RUDE some people can be in the grocery store. It’s unreal…ugh!
Anyway, my best girlfriend, Jessica, and I love making (and eating!) snacks. Tonight, we decided to make a batch of crispy cinnamon apple chips.
These apple chips are so easy to make (even without a dehydrator!), and they make your entire kitchen smell incredible!

Grain Free Chocolate Chip PB Banana Protein Muffins (and Pole Dancing!)

Whew! That’s a mouthful to say (and also to eat!). Tonight, I went to my good friend, Tara’s, pole fitness bachelorette party, and it was such an awesome workout. I was totally in the need for these little guys after! (Side thought: Any ladies who haven’t tried a pole fitness class, it is definitely an experience! I was super nervous and ended up having a blast! It was an exhilarating and empowering experience). Anyways, back to these muffins! I was pretty hungry after and I also needed a snack for work, so I quickly whipped up a batch of Chocolate Chip Peanut Butter Banana Protein Muffins.

Lettuce Wrapped Bison Burgers (Paleo-Friendly)

Last night, I had an insatiable craving for bison (I know…weird, right?!?). So what’s a girl to do but make delicious, lettuce wrapped bison burgers?! This meal is sure to please any hungry carnivore!

If you haven’t tried bison or buffalo meat, you are missing out! Bison (grass-fed) is a great alternative to beef when you are looking for a lean, flavorful burger. Grass-fed bison is loaded with high quality omega-3 fatty acids and vitamin E. Grass-fed bison is also lower in fat and higher in protein than traditionally grain fed bison and ground beef! This lean, nutrient dense meat has an incredibly rich flavor that you will love!

Valentine’s Day Dinner

Last night, my sweetie and I shared a beautiful meal of filet mignon Oscar-style paired with asparagus roasted with garlic, lemon, and herbs. We had originally planned to include herb-roasted potatoes covered in a lemon cream sauce (which would have complemented the steak VERY nicely), but alas, were forced to substitute linguine in the same sauce since we didn’t have enough potatoes. Fortunately, the lemon cream sauce was so damn delicious that it didn’t seem to matter what we put it on, with the singular condition that whatever we put it on went immediately into our mouths. Simply-put, the flavor is incredible. You’re going to want to try this…

Coconut Flour Chocolate Chip Banana “Bread”

Let’s face it, bread is delicious. And although it is delicious, many of us still attempt to cut it—painfully, I might add—out of our diets while adhering to a Keto or Atkins-based program, only to discover that 1) we are weak creatures and 2) that our bodies crave carbs!

Consuming complex carbohydrates is essential for both energy and happiness, and once you combine complex carbohydrates (the healthier, energy-sustaining variety) with bananas, lipids, sugar, and CHOCOLATE (my weakness), it becomes damn-near irresistible! For some of us though, eating a butter and sugar-laden bread on the daily isn’t a viable option. I am one of these people.

With this in mind, I endeavored to create a low-fat breakfast bread with bananas, chocolate chips, and of course, deliciousness. It was my first time using this recipe, so I wasn’t sure how it would come out.
