Grain Free Chocolate Chip PB Banana Protein Muffins (and Pole Dancing!)

Whew! That’s a mouthful to say (and also to eat!). Tonight, I went to my good friend, Tara’s, pole fitness bachelorette party, and it was such an awesome workout. I was totally in the need for these little guys after! (Side thought: Any ladies who haven’t tried a pole fitness class, it is definitely an experience! I was super nervous and ended up having a blast! It was an exhilarating and empowering experience). Anyways, back to these muffins! I was pretty hungry after and I also needed a snack for work, so I quickly whipped up a batch of Chocolate Chip Peanut Butter Banana Protein Muffins.

For these babies, you’ll need to grab one banana, one egg white, one tablespoon of all natural organic peanut butter, a shake of pumpkin pie spice or cinnamon, 1 scoop of whey protein, a splash of unsweetened almond milk and  some Enjoy Life Mini Chocolate Chips (because chocolate chips are AWESOME). These muffins are grain , soy and gluten free (Also, paleo friendly if you swap the peanut butter with any nut butter and the whey for a paleo protein!). I used a mini muffin tin for this one and made 12 mini muffins. You can easily double, triple or quadruple this recipe (is QUADRUPLE excessive!?!?).

Chocolate Chip PB & Banana Protein Muffins

  • Servings: 12 Mini Muffins

Ingredients

  • 1 medium sized banana, mashed (about 80g without skin)
  • 1 large egg white (3 tablespoons of liquid egg white)
  • 1 tablespoon All Natural Peanut Butter
  • 1 scoop whey protein powder (I use Optimum Nutrition Gold Standard 100% Whey in Double Rich Chocolate)
  • 1/2 tablespoon pumpkin pie spice (or just cinnamon)
  • 1 oz of unsweetened vanilla almond milk
  • 1 tablespoon Enjoy Life Semi-Sweet Chocolate Mini Chips
  • 1/2 teaspoon baking powder
  • pinch of salt

Steps

Preheat oven to 375ºF.

Mix all ingredient in a bowl using an immersion blender to blend well. Pour batter into a lined mini muffin tin, or a silicone mini muffin pan . Evenly distribute one tablespoon of mini chips onto your muffins. Bake for 10-15 minutes or until set (some ovens are weird!)
